INGREDIENTS: 100g (4 oz) self raising flour
50g (2oz) soya margarine
A drop of soya milk
50g (2 oz) self raising flour
125g (4 oz) sultanas
METHOD:
Pre-heat the oven to 400°F, 205°C, Gas Mark 6.
In a mixing bowl, combine the margarine and flour. Use your fingers to rub the ingredients together until they resemble a breadcrumb consistency. Add the sultanas.
Make a well in the centre of the mixture and pour in enough milk to make a soft dough.
On a floured surface, knead for 3 to 4 minutes.
Roll out the pastry until it is 2cm (3/4 in) thick.
Cut out rounds of dough with a pastry cutter approximately 7.5cm (2 in) in size.
Place on a greased baking tray and moisten the tops with soya milk.
Bake towards the top of the oven for 15 minutes until golden brown.
Cool on a wire rack.
